Holy Week

It's been my tradition already that every Holy Week, I try to avoid eating meat. It's nothing more like a fasting for me. Holy Week is one of the most important religious Festival here in the Philippines or also known as "Semana Santa". Most of the business Establishments here are having later opening, early closing or having shut down operation every Holy Week. Last night, Holy Thursday, my son and i went to our province in Cavite to make "Visita Iglesia", a popular tradition which usually involves going to 7 different churches. Wish i could take some photos of the churches we visited, but as a matter of respect, i dare not to bring my camera. Today, Good Friday, is still a legal Holiday here. We are about to watch the "Senakulo", a passion play.
Also today, as a part of my fasting, i ate "Lumpiang Sariwa or Fresh Lumpia" for my breakfast. Freah Lumpia is a common Filipino appetizer. It is very easy to prepare "Freshj Lumpia", You can use any type of vegetables you want. I got some Cabbage, "Ubod" or Peach palm, "Sayote" or Chayote, and carrots.
Here's how to start. Prepare necessary ingredients including the wrappers or crepes. Sliced all the veggies. You can actually include some meats here either chicken , ground pork or beef but as what i said, i do not eat meat during Holy Week. Stir fry the veggies then set aside. Place the veggies inside the wrapper and roll it.
For the sauce. All you need is corn starch, soysauce, brown sugar, vinegar, crushed garlic, and water. Mixed all the ingredients and saute it in a pan. Presto! You now have a healthy, yummy fresh Lumpia.
